Ingredients:
Almond flour: 90g
Powder sugar: 80g
Cocoa powder: 5g
Two egg whites
Granulated sugar: 70g
Bitter chocolate:100g
Heavy cream: 100ml
Orange food coloring
Chocolate pens
Because we are making two colors of macaroons, split the ingredients into 2s. (Except for the cocoa powder, chocolate, and heavy cream.)
First, we will be making the chocolate ganache that goes inside
You will need your heavy cream and chocolate.
Get your Heavy cream and put it in a pot and heat it up till it is about to bubble.
Then, take it off the stove and add in your chocolate little by little till everything is melted and mixed in well with the heavy cream.
*If the chocolate does not completely melt, heat up if necessary.
Let the chocolate mixture cool down and after it is cooled wrap it in a container and leave it in the fridge for 1 hour.
Now we will be making the cookie part of the macaroons. You will need almond flour, powdered sugar, and cocoa powder.
Split your ingredients in half except for the cocoa powder.
(You will do these steps for both of the batches)
First, add your flour into a bowl
Then, sift your powdered sugar into the almond flour.
Into one of the bowls, add your 5g of cocoa powder
Now mix all of the ingredients together so you have one brown colored mixture and one white colored mixture.
Let those sit aside
Now you will need your egg whites and granulated sugar. (1 egg white and 35g of sugar for each batch)
Get your egg whites and whisk it in a bowl with a mixer till it is white.
Then add in your granulated sugar little by little so that the sugar is mixed in well
In the end, the egg whites should be completely white and it should be very fluffy.
Now you will need your almond powder mixture and the egg white mixture.
Add your almond powder into the egg whites and mix the two together. (Make sure to mix lightly so that the fluffiness will not disappear.
Into the batch without the cocoa powder, add in orange food coloring
After mixing them together, it should look like this,
Once you have completed these steps, it is time to make them into circles.
Get your oven tray and cover it with parchment paper.
Now get a piping bag and put in either mixture.
Then pipe out circles that are around 5 cm in diameter.
Do this for both of the mixtures.
Once you have piped them out into circles, let them sit till the surface hardens. (This is so that the macaroons will have fewer to no cracks in them once we bake it)
It will usually take around an hour for them to harden.
Once the surface is hardened, pre-heat your oven to 150cº (Celcius)
After the surfaces have hardened, bake your macaroons for 13 minutes at 150cº
Now that it has baked, leave it out for them to cool.
Now for the final steps, get the chocolate ganache that you have previously made, and spread or pipe it onto the macaroon.
You can mix match the colors or just do brown and orange.
Once you have added in your ganache you are done!
If you want to you can decorate your macaroons with chocolate pens and make them look extra spooky.
