Ingredients:
Tart
Flour: 1cup/120g
Butter: 140g
Granulated Sugar: 40g
Vanilla Extract: 1 teaspoon
Filling
Eggs: 3
Granulated Sugar: 1cup/180g
Flour: 30g
Lemon Juice;:2 lemons
Lemon Skin: 1 lemon
1. In a bowl, soften the butter, then combine all the tart ingredients with an electric mixer.
2. Once it is well combined, spread the batter out on a 25x25cm cake pan. Poke holes in the batter using
a fork.
3. Preheat the oven to 200cº, then bake for 12-15 minutes.
4. In another bowl mix together the eggs, granulated sugar, and flour with an electric mixer.
5. Then add the lemon juice and grated lemon peel, until well mixed.
6. Take the tart out of the oven and pour the filling on top of the tart.
7. Bake the tart for another 10 minutes.
8. Cool the tart, then cut it into small squares. Add some powdered sugar on top and enjoy!
