A recipe perfect for Valentine's Day!
Ingredients:
Chocolate cake:
Butter 125g
Chocolate 125g
Egg yolks x3
Egg whites x3
Sugar 95g
Salt ⅙ teaspoon
Flour 30g
Almond poodle 20g
Cocoa powder ½ teaspoon
Mousse:
Powder Gelatin 5g
Raspberry or berry puree 100g
Whole cream 130g
Granulated sugar 25g
We will start by making the chocolate cake...
1. In a bowl, add the chopped chocolate and butter, and melt while mixing. Take the bowl off the heat, and wait for 1-2 minutes until it is back to room temperature
2. Add in each of the egg yolks one at a time, and mix well
3. In a different bowl, add in the egg whites, salt, and a pinch of sugar, and mix until fluffy and white, and then add in the rest of the sugar
4. Add in half of the egg white mixture into the chocolate mixture, and mix well with an electric mixer
5. Add the rest of the egg white mixture to the chocolate mixture and stir slowly by hand
6. Add in the flour, almond powder, and cocoa powder, and mix with an electric mixer
7. Pour the batter into a cake mold. Preheat the oven to 230º
8. Bake the cake in the 230º oven for 8-10 minutes, and lower the heat to 170º and bake again for 17 minutes
Now we will make the chocolate mousse...
1. Add the sugar and half of the raspberry puree into a pot, and cook on medium heat. Once the mixture starts to bubble, add in the gelatin powder and mix well
2. Add in the rest of the raspberry puree and mix well. Turn off the heat and let cool until it is at room temperature
3. In another bowl, add in the whole cream and mix until it becomes slightly thick
4. Add the raspberry puree mixture into the whipped cream and mix well
5. Pour the mixture into a mold and let cool in the fridge for an hour
Now its time to assemble the cake!!
Using the same mold, cut out the same sized circle from the cake
Layer the mousse on top of the cake
Top it with any kind of decoration
