Would you ever have thought that National caramel day was a real thing? April 5th is National Caramel day so it is the best day to celebrate your love for caramel.
Caramel is made by mixing milk with a sugary syrup that has been heated and stirred until it reaches a light brown color. Around the year 1850, someone discovered that adding milk and a fat product to the cooked sugar mixture resulted in a soft, chewy candy. People started creating many desserts with caramel and today caramel is a very popular candy. So here are 3 simple scrumptious desserts that YOU can make at home!
(All of these recipes require caramel sauce which can be homemade or melted store-bought caramel candy)
Salted- Caramel Cups
Ingredients
1 ½ cups Rolled Oats
1 ½ cups pecan halves
½ cup pretzels
⅔ cup coconut oil, melted
a pinch of salt
1 cup thick caramel– could be homemade caramel or store-bought caramel pieces melted into a sauce
2 cups chocolate chips, melted
Method
Crush the oats, pecans and pretzels into small pieces or put them in a food processor. Once broken down, add coconut oil and salt until a soft dough forms. Chill in the refrigerator for around 15-20 minutes.
Prepare the caramel sauce and melted chocolate.
When the crust is a good consistency, press into a muffin tin, leaving a center in the middle for the filling. Add a tablespoon of caramel or two into the center and top with melted chocolate.
Refrigerate or freeze until the chocolate hardens. Remove from muffin tins and serve (give them a little time if they’ve been frozen) Yum!
Creme Caramel
Ingredients
½ cup of Caramel– could be homemade caramel or store-bought caramel pieces
¼ cup (60 ml) sugar
2 teaspoons (10 ml) vanilla extract
2 cups (500 ml) hot milk
3 eggs
Method
Preheat the oven to 180 °C (350 °F).
Divide the caramel among six 125 ml (½ cup) capacity ramekins. Allow to cool.
Add the sugar and vanilla extract to the hot milk and stir until the sugar has dissolved.
In a bowl, beat the eggs. Whisk in the hot liquid. Pour this mixture into the ramekins.
Next, in a large baking dish, prepare a water bath by placing a towel at the bottom. Place the ramekins in the dish and fill it up halfway with warmed up water.
Bake for about 40 minutes.
After removing the ramekins from the water, let it cool and refrigerate for a while.
Use a knife on the inside of the ramekins and invert. Serve the dessert cold and done!
Caramel Tart
Ingredients
1 pre-baked unsweetened shortcrust pastry crust (Can be homemade or store-bought)
14 ounces of caramel– could be homemade caramel or store-bought caramel pieces
Chocolate sprinkles
Method
Open the can of caramel and pour into the pastry base, smoothing it out equally with a spatula or a butter knife.
Sprinkle over the chocolate sprinkles or any topping of your choice.
Refrigerate for at least 1 hour and serve. Yay!
